Our Honeydew Honey is made by the collection of sweet liquid that honeybees find on the trees' bark and leaves. It is generally higher in minerals and amino acids than floral honey. Honeydew Honey is considered to have higher antibacterial properties due to higher levels of glucose oxidase.
Honeydews are a great sweetener, since they have a lower proportion of sugar than honeys made from nectar. In addition, they have a higher percentage of polyphenols — the compounds that give honeydew its antioxidant properties.

Raw vs Filtered Honey
Raw honey is heated to a minimal temperature to reverse crystallisation. Later it is strained to remove foreign objects like honeycomb, bee wax, and other natural remains. RoseTulips honey is raw and carefully strained.
Filtered honey is heated to higher temperatures to prevent crystallisation for even longer. Later it is processed through a filter for more refined purification.
Honey Crystallisation
Crystallisation is a natural process that occurs in honey and aids its conservation. It is a sign that the honey was not treated under high temperature. If crystallised, place the honey container in a warm water bath to transform the crystals back to liquid form. Store at room temperature in a dry, airtight container.
